I love cutting with my Hazaki Classic. They’ve got a beautifully thin blade that, thanks to the incredible AUS10 steel they used, gets wicked sharp and keeps an edge beautifully. AUS10 is amazing stuff; stainless steel that cuts and keeps an edge much like traditional high carbon steel, but doesn’t rust. The blackwood handles complement the blades perfectly for a very slick package.
Hazaki prefers the natural look and feel of the Canadian wood used in their handles, so they are not sealed. I recommend a light coat of every few months to keep them looking and feeling great!
